APRICOT ICECREAM




INGREDIENTS

MILK - 500ML

SUGAR - 1/2 CUP

CONDENSED MILK - 1TIN

APRICOTS -  1/2 CUP

VANILLA ESSENCE - 1/4TSP

APRICOTS - 4NOS(CHOPPED)

METHOD

  • BRING MILK TO BOIL IN A WOK.
  • ADD SUGAR, AND MIX.
  • SOAK 1/2CUP APPRICOTS IN WATER FOR 10 MINS
  • BLEND TO SMOOTH PASTE.
  • ADD IN APRICOT PASTE, CONDENSED MILK AND VANIILA ESSENCE.
  • FREEZE IT FOR 3 HRS.
  • NOW BLEND THE MIXTURE TO SMOOTH PASTE.
  • ADD IN CHOPPED APRICOTS AND FREEZE FOR 6 HRS.
SERVE.

FALUDA


Faluda is one of the popular recipe from hyderabad cusine. it is known as Irani faluda and the main ingredient is milk. Here I added rosemilk essence for extra taste.However it can be omitted.It is best choice to have in summer.

INGREDIENTS

MILK - 1 CUP (CHILLED)

SUGAR - 4TSP(ADJUST ACCORDING TO TASTE)

SABJA SEEDS- 3TSP

VERMICELLY -  2TBPS(BOILED)

ROSE MILK ESSENCE - 1TSP

KOYA - 1TSP
BADAM (CHOPPED)

KAJU(CHOPPED)

RAISINS

VANILLA ICE CREAM - 1 SCOOP.
METHOD


  • SOAK SABJA SEEDS IN WATER FOR HALF AN HOUR .
  • ADD ROSE MILK ESSENCE AND SUGAR TO THE MILK AND MIX WELL
  • TAKE SABJA SEEDS IN TO A GLASS. ADD IN BOILED SAMIYA AND MILK.
  • ADD VANILA ICECREAM  , KOYA AND GARNISH  WITH CHOPPED BADAM, KAJU AND RASINS.

CARROT HALWA




INGREDIENTS

Carrot - 250gms(grated)

Sugar - 1cup

Kowa - 1/2 cup

Ghee - 2tbsp

Ilachi powder - 1/2tsp

Badam (chopped)

Cashewnuts

Raisins

METHOD

  • Take sugar in a deep bottomed vessel.
  • Add 1 cup of water. Let the sugar dissolve.
  • Add grated carrot and cook for 10 mins.
  • Add ghee and kowa. cook till it thickens and ghee leaves sides.
  • Add  Chopped badams, raisins and cashews.
Garnish with badam and serve.

CHOCOLATE DELIGHT




INGREDIENTS

Cocoa powder - 1/2 cup

Milk powder-  1 cup

Butter - 2tsp

Five star chocolate - 2 nos

Sugar - 1 cup

Condensed milk - 1/2 cup

METHOD

  • Take sugar in a deep bottomed vessel.
  • Add water and make sugar syrup with one string consistency
  • Sieve together milk powder and cocoa powder.
  • Add this mixture to sugar syrup and stir continuously to avoid lumbs.
  • Add chopped five star and let it melt.
  • Add condensed milk and butter
  • Cook on medium flame, till it leaves sides.
  • Spread on a greased plate and let it cool.
Cut in desired shapes and serve.

BADAM KULFI




INGREDIENTS


Milk - 500ml

Condensed milk - 1/2 cup

Fresh cream -  3tbsp

 Sugar - 1 cup

Kesar - 1 pinch

Badam - 1/2 cup

Badam mix - 2tsp

METHOD

  • Bring milk to boil  in a deep bottomed pan.
  • Stir continuosly till milk reduced to 250 ml.
  • Add sugar, condensed milk and fresh cream.
  • Cook for 10 mins.
  • Remove from fire and add badam mix and soaked kesar.
  • Add chopped badam.
  • Mix well and let it cool.Pour in kulfi moulds
  • Freeze it for 4-6 hrs.

ICE CREAM WITH BLACK CURRENT FLAVOUR


INGREDIENTS


Milk - 500ml

Sugar - 1 cup

Fresh cream - 2tsps

Grape essence - 1tsp

Raisins(for garnishing)

METHOD

  • In a skillet boil milk and let it cool down.
  • Add sugar and mix until it dissolve.
  • In a airtight cointainer take grape essence and fresh cream .
  • Now add milk and mix well.
  • Add raisins and freeze it overnight.
Garnish it with raisins.

RAJASTANI MAWA MISHRI



INGREDIENTS

 Milk - 500ML

 Sugar- 1/2 cup

Cardamom powder -1 teaspoon

Mishri (crystal sugar)-1/4 cup

 Kaju-1 teaspoon (for garnishing)

Rasins -1 teaspoon  (for garnishing)

 Ghee- 1teaspoon

Saffron (for garnishing)


METHOD

  • Heat milk in a heavy bottom pan. Stir it continuously. Reduce the milk until it starts to thicken. It may take apprroxmately 10- 20 mins.
  • Add in the ghee, sugar and cardamom powder. Cook for 5 more minutes on medium heat.
  • When it cools down a little add mishri to it and mix.
  •  Garnish it with kaju, rasins and saffron.

CHOCOLATE BADAM BURFI




INGREDIENTS

Milk - 1cup

Sugar - 1 1/2 cup

Cocoa powder - 1/2 cup

Badam - 50 gms

Ghee - 2tsps

METHOD

  • Soak badam in warm water for 1hr.
  • Remove peel and grind to paste.
  • Boil milk in heavy bottam sauce pan.
  • Add badam paste to the milk and cook for 5 mins.
  • Now add sugar to the milk and stir continuously till it dissolve.
  • Add 1tbsp milk to cocoa powder and make smooth paste.
  • Add this paste to the boiling milk stiring continuosly to avoid lumps.
  • Add ghee to this and cook until it leaves sides.
  • Pour the mixture in greased plate and let it cool
  • Cut in desired shapes.
Garnish with chopped  badam.

BADAM KHEER




INGREDIENTS

Badam - 1 cup
Sugar - 1/2 cup
Milk - 500 ml
Cashew nuts 
Raisins
Saffron

METHOD

  • Soak badam in warm water for 2 hrs.
  • Grind it to a smooth paste.
  • Boil milk in a sauce pan
  • Add badam paste and sugar to the milk and stir continuously Till it thickens.
  • Add soaked saffron, cashews and raisins.


Serve hot or refrigerate for for 2 hrs and serve chilled

FRUIT SALAD



INGREDIENTS

Milk - 1 cup

Vanilla custard powder - 2 tsp

Sugar - 3tbsp

Apples (chopped)

Pine apple(chopped)

Watermelon (chopped)

Grapes.

Papaya(chopped).

Bannana(chopped).

Chickoo/sapota(chopped).

Dates.

METHOD

  • Bring milk to boil.
  • Add Sugar to milk.
  • Dilute custard powder with milk.
  • Add this mixture to the milk slowly.
  • Stir continuosly till the mixture thickens.
  • Remove from fire and cool it .
  • Refergirate the custard for 1 hr.
  • Chop all the fruits
  • In a bowl spread  custard and  fruits in layers
  • Finally garnish with dates and dates syrup and serve chilled.

INGREDIENTS

Dates - 50gms

Milk - 500ml

Sugar - 1 cup

Fresh cream - 2tsps

Dates syrup (For garnishing)

Dates (chopped) ( for garnishing)

METHOD

  • Add some water to dates and cook for 10 mins.
  • Now grind this mixture and exract juice.
  • In a skillet boil milk and let it cool down.
  • Add sugar and mix util it dissolve.
  • In a airtight cointainer take dates juice and fresh cream .
  • Now add milk and mix well.
  • Add chopped dates and freeze it overnight.
Garnish with  chopped dates and with dates syrup or honey.

BASIL ICECREAM





INGREDIENTS


Basil/ tulasi leaves - 1 cup

Milk - 500 ml


Sugar - 1 cup


Fresh cream - 3tsp


Gelatin(unflavoured) - 10 gms

Green food colour


METHOD

  • Take gelatin in a bowl. Add 1/2 cup cold water and leave aside to set.


  • Boil milk in  medium flame and add sugar.

  • Boil till the sugar dissolves and let it cool down.

  • Grind the tulasi leaves to a smooth paste by adding water and extract juice.

  • Add 2tsps of sugar to this water and boil for 10 mins.

  • Strain this syrup and add food colour.

  • Fold in tulasi syrup, milk in the gelatin mixture.

  • Freeze this mixture in airtight cointainer for 6 hrs or overnight.

MANGO ICECREAM


INGREDIENTS

 Ripe Mangoes - 2

Milk - 500 ml

Sugar - 16tsp

Fresh cream - 1/2 cup ( I used Amul fresh cream)

Mango essence - 1/2 tsp

METHOD

  • Bring milk to boil and add sugar.
  • Let it cool down.
  • Cut mangoes in to small pieces.
  • Blend mango pieces and fresh cream to a smooth paste.
  • Add this paste to milk by stirring continuosly to avoid lumps.
  • Add Mango essence and mix well.
  • Freeze this mixture for 6 to 8 hours

WATERMELON MELLONGE


INGREDIENTS

Milk - 500ml

Condensed milk - 60ml (I used milkmaid)

Sugar - 2tsp

Watermelon juice - 1 cup

Vanilla Custard powder - 2tsp

Honey - 2tbsp

Vanilla essence - 1/2tsp

Tutti Fruty


METHOD

  • Boil milk in a deep bottomed vessel until it reduce to 250ml.
  • Now add sugar and let it boil till sugar dissolves
  • Dilute custard powder in cold milk and add to the boiling milk slowly by stirring continuously.
  • When it is getting thicker, remove from heat and let it cool.
  • Now add watermelon juice, condensed milk,honey, vanilla essence and mix well.
  • freeze it.

Garnish with Tutti fruty and serve

MALAI KULFI

        Kulfi the famous indian dessert available in different flovours like rose, cardamom, pistachio, mango etc. Traditionally, Kulfi comes frozen in cone shaped moulds or special earthen pots called madka;Here I used plastic pot like moulds.Kulfi is different from traditional ice-creams in that, Kulfi contains much less air; it is full milk evaporated in a special vat, with constant agitation to form a coagulated and creamy concoction.


Malai kulfi
 INGREDIENTS

Milk - 500ml

Milkmaid - 1 can(400ml)

Cornflour - 3tsp

METHOD

  • In a long bottom vessel, bring milk to boil.
  • Add Condensed milk and stir continuosly till it reduce to half
  • Add diluted cornflour by strring continuosly until it thickens.
  • Remove from heat and let it cool.
  • Pour in moulds and freeze it for 6hrs.

APPLE CUSTARD ICECREAM

INGREDIENTS:

Apple: 1

Milk : 1 litre

Sugar : 1 cup(adjust)

Custard Powder : 2 tsp

Vanilla essence : 1tsp

METHOD

  • Take custard powder in a bowl and dilute it with cold milk and keep a side.
  • Chop the apple and grind it to a smooth paste and keep aside.
  • Boil milk in a vessel and add sugar.
  • Now reduce the flame and slowly add diluted custard powder by stirring continuously
  • In a bowl mix apple puree , vanilla essence and boiled milk and let it cool down
  • Freeze this mixture for 5 to 6 hours

CHOCOLATE ICE CREAM



INGRDIENTS :

Milk - 250ml

cocoa powder - 2 tsp

custard powder - 1 tsp

milk powder - 2 tbsp

sugar - 8 tsp

Cashew nuts - 10 nos

METHOD :

  • Take a bowl and sieve cocoa powder, custard powder and milk powder together.
  • Now add 2 tbsp cold milk and make it to a smooth paste.
  • In a vessel boil milk and add sugar. when milk reduced to 31/4 quantity,  add cocoa paste slowly by  stirring continuously
  • Let it boil for 5 minutes. when it is thickening, off the stove and let it cool
  • When it is cool, mix it with electiric mixer for 5 minutes( you can use a blender for this).
  • Add cashews pieces and mix with a spoon.
  • Now deep freeze it for 6 to 7 hours
  • Decorate it with cashews before serving
